Most men seem to like to put on an apron, and stand, with special utensils in hand, by the grill in the garden or on the porch and grill food, be it vegetables, fruit, fish or meat. This kind of rustic cooking seems to appeal to them, perhaps because it is a bit hunter-style, in the open and on an open fire. However this may be here is a recipe for a meal wholly prepared on the grill, wholesome and quickly done.
The salad
2 pears
4 peaches
4 plums
4 tbs olive oil
Salt and ground pepper
Cut the pears lengthwise into slices about a centimeter or half an inch in thickness. Partition the peaches and the plums into fair bits. Place the fruit in a bowl and drizzle it olive oil over it, tossing the fruit in the oil. Next put the pear slices and the bits of peaches and plums on a hot grill. Let the fruit caramelize on the grill and turn the slices and the bits over to make sure that they are done on all sides. Finally, with the fruit still on the grill, season it a bit with some salt and ground pepper, and then put the fruit aside.
The monkfish
33 oz / 950 gr skinless tail of monkfish
1 cup / 240 ml flour
4 tbs olive oil
Salt and pepper
Cut the monkfish tail across through the bone into steaks about an inch in thickness. Put some flour onto a plate and spread it out. Roll the monkfish steaks in the flour and then season the steaks on both sides with salt and ground pepper. Brush the steaks with the olive oil and put them on the hot grill and let them cook till the steaks are done and have acquired a golden hue on both sides. When monkfish steaks are cooked in this way, they may be considered cooked ossobuco style.
Serving
2 cups / 475 mixed greens, e.g. lettuce loosely packed
Add the mixed greens in a bowl with the grilled fruits and toss them together. Serve the salad just like that with the grilled monkfish, this is a rustic plate and no sauce or vinaigrette is really needed with this course, as there is plenty of moisture in the pieces of fruits and the fish. Still, if you desire to use your imagination and creativity, some fitting sauce can be devised.
